A perfect balance of tart lemon and sweet strawberries, these Strawberry Lemon Bars are a delightful treat that dances on your tongue.

Ingredients

  • 1 cup unsalted butter
  • 1 cup all-purpose flour
  • 1/2 cup powdered sugar
  • 1/4 cup brown sugar
  • 1/4 teaspoon salt
  • 3 large eggs
  • 1 cup granulated sugar
  • 1/2 cup lemon juice
  • 1 tablespoon lemon zest
  • 1 cup strawberries, pureed
  • 1 tablespoon gelatin (optional, for glaze)
  • 1/4 cup water (for glaze)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a baking dish.
  2. Brown the unsalted butter in a saucepan over medium heat until browned and nutty.
  3. Mix together the brown butter with flour, powdered sugar, brown sugar, and salt.
  4. Press the mixture firmly into the bottom of the prepared dish.
  5. Bake for 15-20 minutes until golden brown, then let it cool slightly.
  6. Whisk together eggs, granulated sugar, lemon juice, and lemon zest in another bowl.
  7. Pour the mixture over the cooled crust.
  8. Bake for another 20-25 minutes until the lemon layer is set.
  9. Combine pureed strawberries, sugar, water, and gelatin in a saucepan to make the glaze.
  10. Once the lemon layer is set, pour the strawberry glaze over the top.
  11. Chill the bars in the refrigerator for several hours.
  12. Slice into bars and serve with powdered sugar on top.

Notes

Serve with whipped cream or vanilla ice cream; pairs well with iced tea or lemonade.
