Beef Birria Tacos

Juicy, spiced beef enveloped in warm, crispy corn tortillas, served with rich and aromatic chili sauce.

Ingredients

  • 2 lbs beef chuck roast
  • 4 dried guajillo chilies
  • 2 dried pasilla chilies
  • 1 onion, quartered
  • 4 cloves garlic
  • 1 tsp cumin
  • 1 tsp oregano
  • 3 cups beef broth
  • Salt and pepper to taste
  • Corn tortillas
  • Chopped onions and cilantro for garnish

Instructions

  1. Toast dried chilies in a pan over medium heat for 3-4 minutes until fragrant, then soak in hot water for 20 minutes.
  2. Blend soaked chilies with onion, garlic, cumin, oregano, and half a cup of beef broth until smooth.
  3. Season the beef chuck roast with salt and pepper.
  4. Place seasoned beef in the slow cooker and pour chili sauce over it.
  5. Add remaining beef broth around the meat, then set slow cooker to low and cook for about 8 hours.
  6. Shred the beef with forks once tender and serve in corn tortillas topped with onions and cilantro.

Notes

Season the beef generously for optimal flavor. Toasting the chilies enhances their depth. Serve immediately for the best texture.
