A comforting and colorful chicken burrito bowl packed with flavor, protein, and fresh veggies, perfect for busy weeknights.

Ingredients

  • 1 lb chicken breast, cooked and shredded
  • 1 cup cooked rice
  • 1 can black beans, drained and rinsed
  • 1 cup corn, canned or frozen
  • 1 cup salsa
  • 1 cup shredded cheese
  • 1 avocado, diced
  • 1 cup lettuce, shredded
  • 1 tsp cumin
  • Salt and pepper to taste
  • Tortilla chips (optional)

Instructions

  1. Mix the Flavorful Base: In a large bowl, combine the shredded chicken, cooked rice, black beans, corn, salsa, cumin, salt, and pepper. Mix well until all the ingredients are fully combined.
  2. Layer the Deliciousness: In serving bowls, layer the chicken mixture right at the bottom. Heap a generous amount of shredded cheese on top, letting it melt slightly under the warm ingredients. Then, add the diced avocado and a handful of crisp lettuce for a fresh crunch.

Notes

Leftovers can be stored in an airtight container in the fridge for up to 3 days. To enjoy, reheat in the microwave and add fresh toppings.
