A comforting and hearty soup made with cheese tortellini, savory chicken, and fresh vegetables, perfect for chilly days.

Ingredients

  • 2 cups chicken broth
  • 1 cup cooked chicken, shredded
  • 1 package (9 ounces) cheese tortellini
  • 1 cup carrots, sliced
  • 1 cup spinach
  • 1/2 cup onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Sauté onions and garlic in a large pot with a little oil over medium heat until fragrant, about 2-3 minutes.
  2. Add sliced carrots and sauté for a few more minutes until they start to soften.
  3. Pour in the chicken broth and bring to a boil.
  4. Stir in the cooked chicken and cheese tortellini and cook according to the tortellini package instructions, about 5-7 minutes.
  5. Add fresh spinach and Italian seasoning in the last few minutes of cooking.
  6. Season with salt and pepper to taste, stir, and serve hot.

Notes

For added flavor, pair with garlic bread or a simple side salad. Store leftovers in an airtight container for up to 3 days or freeze for up to 2 months.
