Delicious and easy to make Churro Cheesecake Bars with a creamy filling and a hint of cinnamon-sugar, perfect for any gathering.

Ingredients

Scale
  • 1 package of cream cheese
  • 1/2 cup sugar
  • 1 teaspoon vanilla extract
  • 1 cup graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 1 cup sour cream
  • 1 teaspoon cinnamon
  • 1/4 cup sugar (for topping)
  • 1/4 cup melted butter (for topping)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×9 inch baking pan.
  2. In a bowl, mix the graham cracker crumbs with melted butter until well combined. Press this mixture into the bottom of the prepared pan to form a solid crust.
  3. In a separate bowl, beat together the cream cheese, 1/2 cup sugar, and vanilla extract until smooth and creamy.
  4. Add a cup of sour cream to the cream cheese mixture and mix until fully combined and luscious.
  5. Pour the cream cheese mixture over the graham cracker crust and spread it evenly for a uniform look.
  6. In another bowl, combine the cinnamon and remaining 1/4 cup sugar. Set aside.
  7. Drizzle the melted butter over the cheesecake layer, allowing it to seep in slightly.
  8. Sprinkle the cinnamon-sugar mixture generously over the top of the cheesecake layer.
  9. Bake for 25-30 minutes or until set in the center and slightly golden around the edges.
  10. Once baked, allow the bars to cool at room temperature before transferring to the refrigerator. Chill for at least 2 hours before cutting into bars and serving.

Notes

Serve chilled with vanilla ice cream or whipped cream. Store leftovers in an airtight container in the refrigerator for up to 5 days.
