Delicate French macarons with a perfectly crisp exterior and chewy interior, customizable with various flavors and fillings.

Ingredients

  • 1 cup almond flour
  • 1 3/4 cups powdered sugar
  • 3 large egg whites
  • 1/4 cup granulated sugar
  • 1/2 teaspoon vanilla extract
  • Food coloring (optional)
  • Filling of choice (e.g., buttercream, ganache, jam)

Instructions

  1. Preheat the oven to 300°F (150°C). Line baking sheets with parchment paper.
  2. Sift together the almond flour and powdered sugar until well combined.
  3. Whip the egg whites until frothy, then gradually add the granulated sugar.
  4. Fold the dry ingredients into the meringue until smooth. Add food coloring if desired.
  5. Transfer the batter to a piping bag and pipe small circles onto the prepared sheets.
  6. Let the piped shells sit at room temperature for about 30 minutes.
  7. Bake for 15-20 minutes until set and shiny.
  8. Allow the macarons to cool completely before removing them from the paper.
  9. Pair the shells and fill them with your choice of filling.
  10. Sandwich the filled shells together and enjoy!

Notes

For best results, use room temperature eggs, and consider aging the egg whites for sturdier meringue.
