A delightful twist on classic chicken noodle soup featuring creamy textures and savory flavors.

Ingredients

  • 1 lb chicken breasts
  • 4 cups chicken broth
  • 1 cup cream cheese
  • 1 packet ranch seasoning mix
  • 2 cups egg noodles
  • 1 cup frozen peas and carrots
  • Salt and pepper to taste
  • Chopped green onions for garnish

Instructions

  1. Combine the chicken breasts, chicken broth, ranch seasoning, and cream cheese in a large pot. Cook on medium heat until the chicken is cooked through and the cheese is melted.
  2. Shred the chicken, return it to the pot, and mix with the broth.
  3. Add the egg noodles and vegetables to the pot, bringing to a boil. Cook until noodles are tender.
  4. Season with salt and pepper, and garnish with chopped green onions before serving.

Notes

For a quicker version, use rotisserie chicken. To customize, try adding sautéed mushrooms, spinach, or switch the ranch seasoning with taco seasoning.
