  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 teaspoon thyme
  • 1 teaspoon rosemary
  • 1 pound potato gnocchi
  • 2 cups spinach
  • Salt and pepper to taste
  • Parmesan cheese for serving

Instructions

  1. Sauté the Vegetables: In a large pot, heat the olive oil over medium heat. Add the diced onion, carrots, and celery, and sauté until soft, about 5-7 minutes.
  2. Add the Garlic: Stir in the minced garlic and let it cook for another minute.
  3. Combine Chicken and Broth: Add the chicken broth, shredded chicken, thyme, and rosemary. Bring to a boil.
  4. Introduce the Gnocchi: Once boiling, add the gnocchi and cook until floating, about 3-5 minutes.
  5. Stir in Cream and Spinach: Reduce the heat and gently stir in the heavy cream and spinach until wilted.
  6. Season to Taste: Sprinkle in salt and pepper as desired.
