Deliciously tender and flaky lemon blueberry scones, perfect for brunch or afternoon tea.

  • 2 cups all-purpose flour
  • 1/3 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/4 cup cold unsalted butter, cubed
  • 1 cup fresh blueberries
  • 1 tablespoon lemon zest
  • 1/2 cup heavy cream
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 tablespoon lemon juice

Instructions

  1. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Mix the flour, sugar, baking powder, and salt in a large bowl.
  3. Cut in the cold butter until the mixture resembles coarse crumbs.
  4. Fold in the blueberries and lemon zest.
  5. Prepare the wet ingredients: whisk together cream, egg, vanilla, and lemon juice.
  6. Combine the wet and dry ingredients until just combined.
  7. Shape the dough on a floured surface and cut into wedges.
  8. Bake for 15-20 minutes until golden brown.

Notes
