One Pan Lemon Chicken

A vibrant and flavorful one pan dish featuring tender chicken breasts marinated in zesty lemon, garlic, and herbs, perfect for busy weeknights.

Ingredients

  • 4 chicken breasts
  • 2 lemons (juiced and zested)
  • 2 tablespoons olive oil
  • 4 cloves garlic (minced)
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Fresh parsley (for garnish)
  • Vegetables (such as asparagus or broccoli, optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Combine the lemon juice, zest, olive oil, garlic, oregano, salt, and pepper in a large bowl.
  3. Add the chicken breasts to the bowl and coat them well with the marinade.
  4. Place the chicken in a large baking dish, arranging any optional vegetables around it.
  5. Pour any remaining marinade over the chicken and vegetables.
  6. Bake for 25-30 minutes or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C).
  7. Garnish with fresh parsley before serving.

Notes

Marinating the chicken for a couple of hours or overnight enhances the flavor. You can substitute fresh lemons with bottled lemon juice, though fresh will yield the brightest flavor.
