A vibrant and colorful pasta dish showcasing seasonal vegetables, perfect for a quick weeknight dinner or a relaxed dinner party.

Ingredients

  • 8 oz pasta (spaghetti or penne)
  • 2 tablespoons olive oil
  • 1 cup bell peppers (sliced)
  • 1 cup zucchini (sliced)
  • 1 cup cherry tomatoes (halved)
  • 1 cup broccoli florets
  • 2 cloves garlic (minced)
  • Salt and pepper to taste
  • Grated Parmesan cheese (optional)
  • Fresh basil (for garnish)

Instructions

  1. Cook the pasta according to package instructions. Drain and set aside.
  2. Heat olive oil in a large skillet over medium heat.
  3. Add garlic and sauté for 1 minute until fragrant.
  4. Add bell peppers, zucchini, broccoli, and cherry tomatoes. Sauté for 5-7 minutes until the vegetables are tender.
  5. Combine the cooked pasta to the skillet and toss everything together.
  6. Season with salt and pepper.
  7. Serve hot, garnished with grated Parmesan cheese and fresh basil.

Notes

For added flavor, try mixing in some lemon juice or red pepper flakes. Adjust the vegetables based on what’s in season.
