Delightful raspberry cheesecake bars with a creamy filling and crunchy graham cracker crust, perfect for sharing at gatherings.

Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 1/4 cup sugar
  • 2 (8 oz) packages cream cheese, softened
  • 1 cup sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 1 cup fresh raspberries

Instructions

  1. Preheat the oven to 350°F (175°C). Line a 9×9 inch baking pan with parchment paper.
  2. Combine graham cracker crumbs, melted butter, and 1/4 cup sugar in a bowl. Press mixture firmly into the bottom of the prepared pan.
  3. Beat the softened cream cheese, 1 cup sugar, and vanilla extract until smooth and creamy.
  4. Add eggs one at a time, beating well after each addition.
  5. Fold in the fresh raspberries carefully.
  6. Pour the filling over the crust and bake for 30-35 minutes until set with a slight jiggle in the center.
  7. Cool the bars at room temperature, then refrigerate for at least 4 hours before cutting into bars.

Notes

Serve with whipped cream, powdered sugar, or raspberry sauce for an extra touch.
