A quick and delicious Shrimp Fried Rice that’s loaded with flavors, colors, and can be customized to your liking. Perfect for busy weeknights or a delightful weekend meal.

Ingredients

  • 2 cups cooked rice
  • 8 ounces shrimp, peeled and deveined
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 cup mixed vegetables (carrots, peas, corn)
  • 2 green onions, chopped
  • 2 eggs, beaten
  • Salt and pepper to taste

Instructions

  1. Heat the skillet by heating sesame oil in a large skillet over medium heat, allowing it to shimmer and release its nutty aroma.
  2. Cook the shrimp by adding them to the hot skillet and cooking until pink, about 2-3 minutes, flipping them halfway through.
  3. Scramble the eggs by pushing the shrimp to one side of the skillet and adding the beaten eggs. Scramble until fully cooked and golden.
  4. Add mixed vegetables and cook for another 2 minutes until they are tender yet crisp.
  5. Combine with rice by adding the cooked rice, soy sauce, salt, and pepper. Stir thoroughly until everything is well combined and heated through.
  6. Final touch with green onions by folding in the chopped green onions before serving.

Notes

Use cold rice for best results and feel free to customize your vegetables. Serve warm.
