Baked Feta Chicken Pasta

A comforting baked pasta dish featuring creamy feta cheese, tender chicken, and roasted cherry tomatoes, perfect for weeknight dinners or special gatherings.

Ingredients

  • 1 block of feta cheese
  • 2 boneless, skinless chicken breasts
  • 8 oz pasta (e.g., penne or fusilli)
  • 1 pint cherry tomatoes
  • 3 tablespoons olive oil
  • 23 cloves garlic, minced
  • Salt and pepper to taste
  • Fresh basil for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a baking dish, place the block of feta cheese in the center. Surround it with the juicy cherry tomatoes and the boneless chicken breasts.
  3. Drizzle everything with olive oil and then sprinkle minced garlic, salt, and pepper over the top.
  4. Slide the dish into your preheated oven and bake for 25-30 minutes or until the chicken is cooked through.
  5. While the feta and chicken are baking, bring a pot of salted water to a boil and cook the pasta according to package instructions until al dente.
  6. Once baked, remove the dish from the oven and use two forks to shred the chicken, mixing it with the melted feta and tomatoes.
  7. Toss the cooked pasta into the chicken mixture until everything is well combined.
  8. Finish off your dish by garnishing with fresh basil before serving.

Notes

Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
