  • 1 cup cashews
  • 2 cups mixed bell peppers, chopped
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1/4 cup soy sauce
  • 2 tablespoons oyster sauce
  • 1 tablespoon cornstarch
  • 1 tablespoon vegetable oil
  • Salt and pepper to taste
  • Cooked rice for serving

Instructions

  1. Prepare the Chicken: Cut the chicken into bite-sized pieces and season them generously with salt and pepper.
  2. Mix the Sauce: In a bowl, whisk together the soy sauce, oyster sauce, and cornstarch.
  3. Brown the Chicken: Heat vegetable oil in a large skillet over medium-high heat. Add the seasoned chicken pieces and cook until they’re golden brown.
  4. Sauté the Vegetables: In the same skillet, add the minced garlic, chopped onion, and bell peppers. Sauté until tender and fragrant.
  5. Combine Chicken and Sauce: Return the browned chicken, pour the sauce over, and stir well. Allow everything to cook until the sauce thickens.
  6. Add Cashews: Stir in the cashews, ensuring they are coated in the sauce.
  7. Serve Hot: Serve the Cashew Chicken over a bed of fluffy rice.

Notes

For quick prep, use pre-chopped vegetables. Allow the chicken to marinate for more flavor!
