Turkey Stuffed Peppers

Vibrant bell peppers filled with seasoned ground turkey, rice, and tomatoes, offering a comforting and wholesome meal.

Ingredients

  • 4 large bell peppers
  • 1 pound ground turkey
  • 1 cup cooked rice
  • 1 can diced tomatoes
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1 cup shredded mozzarella cheese

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Prepare the bell peppers by cutting the tops off and removing the seeds.
  3. Sauté the onion and garlic in a skillet until translucent.
  4. Brown the ground turkey in the skillet until cooked through.
  5. Combine the cooked rice, diced tomatoes, Italian seasoning, salt, and pepper in the skillet.
  6. Stuff each bell pepper with the turkey mixture, leaving space for cheese.
  7. Add shredded mozzarella cheese on top of each stuffed pepper.
  8. Bake for 25-30 minutes until the peppers are tender and cheese is melted.

Notes

Serve with a green salad or garlic bread. Leftovers can be stored in the refrigerator for up to 4 days or frozen for up to 3 months.
