Balsamic Bruschetta Chicken

A comforting and flavorful dish featuring juicy chicken topped with fresh tomatoes, mozzarella, and basil.

Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup cherry tomatoes, diced
  • 1/2 cup fresh mozzarella, diced
  • 1/4 cup fresh basil, chopped
  • 1/4 cup balsamic vinegar
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Combine the diced cherry tomatoes, fresh mozzarella, chopped basil, balsamic vinegar, olive oil, salt, and pepper in a bowl.
  3. Season the chicken breasts on both sides with salt and pepper.
  4. Spoon the tomato mixture generously on top of the seasoned chicken breasts.
  5. Bake for 25-30 minutes, or until the chicken is cooked through.
  6. Serve warm, spooning some of the delicious juices from the pan over the top.

Notes

Always taste your bruschetta topping before adding it to the chicken. For a richer flavor, marinate the chicken in balsamic vinegar for an hour before cooking.
