Hearty and delicious black bean burgers that bring the flavor of summer barbecues indoors, perfect for any occasion.

Ingredients

  • 1 can black beans, drained and rinsed
  • 1/2 cup breadcrumbs
  • 1/4 cup onion, finely chopped
  • 1 clove garlic, minced
  • 1 tsp cumin
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 egg (or flaxseed egg for vegan)
  • 1 tbsp olive oil (for cooking)

Instructions

  1. Mash the black beans with a fork or potato masher until mostly smooth, leaving some chunks for texture.
  2. Stir in breadcrumbs, onion, garlic, cumin, salt, pepper, and the egg until well combined.
  3. Shape the mixture into patties, aiming for a thickness similar to standard burgers.
  4. Heat olive oil in a skillet over medium heat and cook the patties for about 4-5 minutes on each side until crisp and heated through.
  5. Serve the patties on buns with your choice of toppings like lettuce, tomato, or avocado.

Notes

Store leftover patties in an airtight container in the fridge for up to 4 days. Reheat them in a skillet or enjoy cold in a salad.
