A comforting pasta dish featuring blackened chicken and creamy Alfredo sauce, perfect for a cozy dinner.

Ingredients

  • 2 boneless, skinless chicken breasts
  • 1 tablespoon blackening seasoning
  • 8 oz fettuccine pasta
  • 2 tablespoons olive oil
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Season the chicken by generously coating both sides with blackening seasoning.
  2. Sizzle the chicken in a skillet with olive oil over medium-high heat for 6-7 minutes on each side until cooked through.
  3. Rest the chicken on a cutting board to lock in the juices.
  4. Sauté the garlic in the same skillet for 1 minute until fragrant.
  5. Create the Alfredo sauce by stirring in heavy cream and gradually adding Parmesan until smooth.
  6. Cook the fettuccine according to package instructions, then drain.
  7. Combine the pasta with the sauce, adding salt and pepper to taste, and adjust consistency with reserved pasta water if necessary.
  8. Slice the blackened chicken and serve on top of the creamy pasta, garnished with fresh parsley.

Notes

For added flavor, consider sautéing vegetables like spinach or red peppers to mix into the pasta.
