A simple and delightful blueberry pie recipe, perfect for summer gatherings and nostalgic baking moments.

Ingredients

  • 2 cups fresh or frozen blueberries
  • 1 cup sugar
  • 2 tablespoons cornstarch
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1 pie crust (store-bought or homemade)
  • 1 tablespoon butter

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Mix together the blueberries, sugar, cornstarch, lemon juice, vanilla extract, and salt in a large bowl.
  3. Pour the blueberry mixture into the pie crust, distributing it evenly.
  4. Dot the top of the filling with small pieces of butter.
  5. Top with another pie crust or create a lattice top.
  6. Cut slits into the top crust for steam to escape.
  7. Bake for 20-25 minutes or until golden brown and bubbly.
  8. Cool the pie on a wire rack before serving.

Notes

Serve with vanilla ice cream or whipped cream for extra indulgence. Store leftovers covered in the refrigerator for up to 3 days.
