Breakfast Burritos

Warm, hearty breakfast burritos filled with scrambled eggs, sausage, bell peppers, and cheese.

Ingredients

  • 4 large flour tortillas
  • 6 large eggs
  • 1 cup shredded cheese (cheddar or your choice)
  • 1 cup cooked and crumbled breakfast sausage or bacon
  • 1 cup diced bell peppers
  • 1/2 cup diced onions
  • Salt and pepper to taste
  • Salsa or hot sauce (optional)

Instructions

  1. Sauté the vegetables: In a skillet, cook the diced onions and bell peppers over medium heat until softened.
  2. Whisk the eggs: In a bowl, whisk together the eggs, salt, and pepper.
  3. Scramble the eggs: Pour the egg mixture into the skillet with the sautéed vegetables. Scramble until fully cooked.
  4. Assemble the burritos: In each tortilla, layer the cooked eggs, cheese, and choice of sausage or bacon.
  5. Warm the burritos (optional): Warm the burritos in the skillet for a few minutes on each side until golden and crispy.
  6. Serve and enjoy: Serve with salsa or hot sauce if desired.

Notes

Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
