Breakfast Quesadillas

Delicious and versatile breakfast quesadillas filled with scrambled eggs, cheese, and your choice of meats and vegetables.

Ingredients

Scale
  • 8 tortillas
  • 4 eggs
  • 1 cup shredded cheese
  • 1 cup cooked bacon or sausage
  • 1/2 cup bell peppers, diced
  • 1/4 cup onions, diced
  • Salt and pepper to taste
  • Sour cream, for serving
  • Salsa, for serving

Instructions

  1. Scramble the eggs and season with salt and pepper.
  2. Warm one tortilla over medium heat in a skillet.
  3. Add half of the scrambled eggs, cheese, bacon or sausage, bell peppers, and onions onto one half of the tortilla.
  4. Fold the tortilla in half and cook until the cheese melts and the tortilla is golden brown.
  5. Repeat with remaining ingredients until all quesadillas are cooked.
  6. Cut quesadillas into wedges and serve with sour cream and salsa.

Notes

These quesadillas can be filled with any leftover vegetables or different meats you have on hand.
