Buffalo Chicken Stuffed Peppers

Delicious stuffed peppers filled with a creamy buffalo chicken mixture, perfect for any gathering.

Ingredients

  • 4 large bell peppers
  • 2 cups cooked shredded chicken
  • 1/2 cup buffalo sauce
  • 1/2 cup cream cheese, softened
  • 1 cup shredded cheddar cheese
  • 1/4 cup green onions, chopped
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Slice the tops off the bell peppers and remove the seeds.
  3. In a bowl, mix the chicken, buffalo sauce, cream cheese, half of the cheddar cheese, and green onions.
  4. Season with salt and pepper, adjusting to taste.
  5. Stuff the mixture into the bell peppers and place them in a baking dish.
  6. Top each pepper with the remaining cheddar cheese.
  7. Bake for 25-30 minutes or until the peppers are tender and the cheese is bubbly.

Notes

You can use rotisserie chicken for convenience, or adjust the buffalo sauce to taste. Store leftovers in an airtight container for up to 3 days.
