A delightful dish featuring chicken breasts topped with fresh mozzarella, cherry tomatoes, and basil, bringing together the vibrant flavors of a classic Caprese salad.

Ingredients

  • 2 chicken breasts
  • 1 cup cherry tomatoes, halved
  • 1 cup fresh mozzarella balls
  • 1/4 cup fresh basil leaves
  • 2 tablespoons balsamic vinegar
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Season the chicken breasts with salt and pepper.
  3. Sear the chicken in a skillet over medium-high heat with olive oil for 4-5 minutes on each side.
  4. Transfer the browned chicken to a baking dish.
  5. Top each chicken breast with cherry tomatoes and mozzarella balls.
  6. Drizzle balsamic vinegar over the chicken and sprinkle with fresh basil.
  7. Bake in the oven for 20-25 minutes until cooked through and cheese is bubbly.
  8. Serve warm and enjoy!

Notes

If you have leftovers, store them in an airtight container in the fridge for up to 3 days. Reheat gently while adding a splash of water to keep the chicken moist.
