A delightful tart filled with cherries and almond paste, perfect for any occasion.

Ingredients

Scale
  • 1 1/4 cups all-purpose flour
  • 1/2 cup unsalted butter, softened
  • 1/4 cup powdered sugar
  • 1/4 teaspoon salt
  • 1 large egg yolk
  • 1/2 cup almond paste
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup fresh or canned cherries, pitted

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, combine the flour, butter, powdered sugar, and salt to create a smooth dough. Press the dough into a tart pan and prick the bottom with a fork to prevent bubbling.
  3. Place the tart crust in the preheated oven and bake for 10 minutes.
  4. While the crust is baking, in another bowl, beat together the almond paste, granulated sugar, eggs, and vanilla extract until smooth and creamy.
  5. Once the crust is ready, carefully pour the almond mixture into the pre-baked crust, spreading it evenly.
  6. Take the cherries and arrange them on top of the almond filling, pressing them gently into the mixture.
  7. Return the tart to the oven and bake for an additional 30-35 minutes, until the filling is set and the top is lightly golden brown.
  8. Allow the tart to cool before slicing and serving.

Notes
