Delicious cherry pie bars with a buttery crust and sweet cherry filling, perfect for summer picnics.

Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1/4 cup unsalted butter, melted
  • 1/4 teaspoon salt
  • 1/2 teaspoon almond extract
  • 1 cup fresh or canned cherries, pitted and halved
  • 1 tablespoon cornstarch
  • 2 tablespoons lemon juice
  • 1/4 cup powdered sugar (for dusting)

Instructions

  1. Preheat your oven to 375°F (190°C) and prepare a baking dish by greasing it lightly.
  2. Combine the all-purpose flour, granulated sugar, melted butter, salt, and almond extract in a mixing bowl.
  3. Press half of your dough mixture into the bottom of the greased baking dish.
  4. In a separate bowl, toss the halved cherries with cornstarch and lemon juice.
  5. Pour the cherry mixture evenly over the crust.
  6. Sprinkle the remaining half of the dough mixture over the cherry layer.
  7. Place your baking dish in the oven and bake for 25-30 minutes.
  8. Allow the Cherry Pie Bars to cool in the pan, then dust with powdered sugar.

Notes

For best results, use fresh cherries when in season. Store leftovers in an airtight container at room temperature for up to two days.
