  • 3/4 cup unsweetened cocoa powder
  • 1 1/2 teaspoons baking powder
  • 1 1/2 teaspoons baking soda
  • 1 teaspoon salt
  • 2 large eggs
  • 1 cup whole milk
  • 1/2 cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup boiling water

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. Combine the flour, sugar, cocoa powder, baking powder, baking soda, and salt in a large bowl. Whisk until blended.
  3. Add the eggs, whole milk, vegetable oil, and vanilla extract. Beat on medium speed for about 2 minutes, then stir in the boiling water.
  4. Pour the batter into the prepared pans, dividing evenly.
  5. Bake for 30-35 minutes, checking with a toothpick for doneness.
  6. Cool in the pans for about 10 minutes, then remove from the pans and cool completely on a wire rack.
  7. Create the ganache by heating 1 cup of heavy cream and pouring it over 8 oz. of chopped dark chocolate. Whisk until smooth.
  8. Assemble the cake by pouring ganache over the cooled cakes, allowing it to drip down the sides.
