Cinnamon Roll Pancakes

Delightfully fluffy pancakes with a sweet, buttery cinnamon swirl, drizzled with creamy icing.

Ingredients

  • 1 cup all-purpose flour
  • 2 tablespoons sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • 1 large egg
  • 2 tablespoons melted butter
  • 1 teaspoon vanilla extract
  • 1/4 cup brown sugar
  • 1 teaspoon ground cinnamon
  • 1/4 cup powdered sugar
  • 12 tablespoons milk (for icing)

Instructions

  1. Mix the dry ingredients: In a large bowl, combine the flour, sugar, baking powder, and salt.
  2. Whisk the wet ingredients: In a separate small bowl, whisk together the milk, egg, melted butter, and vanilla extract.
  3. Combine the ingredients: Carefully pour the wet mixture into the dry ingredients and mix until just combined.
  4. Prepare the cinnamon swirl: In a small bowl, mix together the brown sugar and cinnamon.
  5. Heat the skillet: Preheat a skillet over medium heat, then pour 1/4 cup of pancake batter onto the skillet.
  6. Create the cinnamon swirl: Drizzle the cinnamon-sugar mix on top of the pancake before flipping.
  7. Flip the pancake: Once bubbles form and edges look set, gently flip it over and cook until golden brown.
  8. Make the icing: Mix powdered sugar with a little milk until smooth, then drizzle over pancakes before serving.

Notes

Serve with fresh fruit, crispy bacon, or a hot cup of coffee.
