Egg White Frittata

A vibrant and wholesome dish made with fluffy egg whites and fresh vegetables, perfect for breakfast or brunch.

Ingredients

  • 6 egg whites
  • 1 cup spinach, chopped
  • 1/2 cup bell peppers, diced
  • 1/4 cup onion, diced
  • 1/2 cup feta cheese, crumbled
  • Salt and pepper to taste
  • 1 tablespoon olive oil

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Sauté the diced onion and bell peppers in olive oil for about 5 minutes until softened.
  3. Add the chopped spinach to the skillet and cook until wilted, about 2 minutes.
  4. Whisk the egg whites in a bowl and season with salt and pepper.
  5. Pour the egg whites into the skillet with the vegetables and allow to cook for a few minutes until the edges start to set.
  6. Sprinkle the crumbled feta cheese on top and transfer the skillet to the oven.
  7. Bake for 10-15 minutes or until the frittata is fully set.
  8. Let the frittata cool for a few minutes before slicing and serving.

Notes

Pairs well with a light side salad or fresh fruit. Leftovers can be stored in the fridge for up to 3 days.
