A delightful dessert salad combining acini di pepe pasta, fruits, and a creamy pudding mixture, perfect for summer gatherings.

Ingredients

  • 1 cup acini di pepe pasta
  • 1 can (20 oz) crushed pineapple, drained
  • 1 can (15 oz) mandarin oranges, drained
  • 1 cup mini marshmallows
  • 1 cup whipped topping
  • 1/2 cup sweetened shredded coconut
  • 1/2 cup chopped nuts (optional)
  • 1 package (3.4 oz) instant vanilla pudding mix
  • 2 cups cold milk

Instructions

  1. Cook the acini di pepe pasta according to package instructions; once done, drain and set aside to cool.
  2. Combine the instant vanilla pudding mix with cold milk in a large bowl. Stir gently until thickened.
  3. Stir in the drained crushed pineapple, mandarin oranges, mini marshmallows, whipped topping, shredded coconut, and optional chopped nuts.
  4. Fold in the cooled acini di pepe pasta until well-coated.
  5. Chill the salad in the refrigerator for at least 2 hours before serving.

Notes

Best served fresh, but can be stored in an airtight container in the refrigerator for up to 3 days.
