Grilled Chimichurri Chicken

A vibrant and flavorful grilled chicken dish, enhanced by a homemade chimichurri sauce made from fresh herbs and garlic.

Ingredients

  • 4 chicken breasts
  • 1 cup fresh parsley, finely chopped
  • 1/4 cup fresh oregano, finely chopped
  • 3 cloves garlic, minced
  • 1/2 cup olive oil
  • 1/4 cup red wine vinegar
  • 1 teaspoon red pepper flakes
  • Salt and pepper to taste

Instructions

  1. Make the Chimichurri Sauce: In a bowl, mix the parsley, oregano, garlic, olive oil, red wine vinegar, red pepper flakes, salt, and pepper to create the chimichurri sauce.
  2. Marinate the Chicken: Marinate the chicken breasts in half of the chimichurri for at least 30 minutes.
  3. Preheat the Grill: Preheat the grill to medium-high heat.
  4. Grill the Chicken: Grill the chicken for 6-7 minutes on each side or until fully cooked.
  5. Serve with the remaining chimichurri sauce drizzled on top.

Notes

For extra flavor, add fresh lemon juice to the chimichurri sauce. Ensure chicken is at room temperature before grilling.
