Juicy chicken marinated in soy sauce and brown sugar, grilled to perfection with sweet caramelized pineapple.

Ingredients

Scale
  • 2 chicken breasts
  • 1 cup fresh pineapple, cut into chunks
  • 1/4 cup soy sauce
  • 2 tablespoons brown sugar
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon ground ginger
  • Salt and pepper to taste
  • Green onions for garnish

Instructions

  1. Create the Marinade: In a bowl, mix soy sauce, brown sugar, olive oil, minced garlic, ground ginger, salt, and pepper.
  2. Marinate the Chicken: Add the chicken breasts to the marinade, ensuring they’re well-coated. Let them sit for at least 30 minutes.
  3. Preheat the Grill: While the chicken marinates, preheat your grill to medium-high heat.
  4. Grill the Chicken: Place the marinated chicken on the grill. Cook for about 6-7 minutes per side.
  5. Toss on the Pineapple: During the last few minutes of grilling, add the pineapple chunks to the grill.
  6. Serve and Garnish: Once everything is grilled, serve the chicken topped with pineapple chunks and chopped green onions.

Notes

For extra flavor, marinate the chicken for longer or use a grill pan if a grill isn’t available.
