A comforting dish featuring bell peppers stuffed with a savory ground turkey and rice mixture, perfect for family dinners and meal prep.

  • 4 large bell peppers
  • 1 pound ground turkey
  • 1 cup cooked rice
  • 1 can diced tomatoes (14 oz)
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • 1 cup shredded cheese (optional)

Instructions

  1. Preheat the oven to 375°F (190°C) so it’s nice and hot and ready for our stuffed peppers.
  2. Cut the tops off the bell peppers and remove the seeds. Be gentle—it’s best to keep the pepper intact for stuffing!
  3. Sauté the chopped onion and minced garlic in a skillet over medium heat until soft and aromatic, about 3 to 5 minutes.
  4. Add the ground turkey to the skillet and cook until browned, breaking it apart, about 5-7 minutes.
  5. Stir in the cooked rice, diced tomatoes, chili powder, cumin, salt, and pepper; mix everything thoroughly.
  6. Carefully stuff the mixture into the hollowed-out bell peppers, pressing down gently to pack the filling.
  7. Place the stuffed peppers upright in a baking dish and cover with foil.
  8. Bake for 25-30 minutes in the preheated oven, until the peppers are tender.
  9. If using cheese, remove the foil, sprinkle cheese on top, and bake for an additional 5-10 minutes until melted.

Notes

For extra nutrition, consider adding chopped spinach or zucchini to the filling. Leftovers can be stored in an airtight container for up to 3 days and also freeze well for up to 3 months.
