A vibrant and flavorful dish consisting of crispy tortillas, sunny-side up eggs, refried beans, zesty salsa, and creamy avocado.

Ingredients

Scale
  • 4 corn tortillas
  • 4 large eggs
  • 1 cup refried beans
  • 1 cup salsa
  • 1 avocado, sliced
  • 1/4 cup cilantro, chopped
  • Salt and pepper to taste
  • Oil for frying

Instructions

  1. Heat the oil in a skillet over medium heat.
  2. Fry the corn tortillas in the hot oil until crispy, about 2 minutes on each side.
  3. Cook the eggs sunny-side up in the same skillet, seasoning with salt and pepper.
  4. Warm the refried beans in a small pot over low heat.
  5. Assemble the Huevos Rancheros by spreading refried beans onto each tortilla, topping with a fried egg and salsa.
  6. Garnish with avocado slices and cilantro before serving.

Notes

For added excitement, consider customizing with chorizo, different beans, or even poached eggs for a lighter version.
