A warm, tender Lemon Blueberry Buckle with sweet, juicy blueberries and a hint of fresh lemon. Perfect for any occasion.

Ingredients

  • 1 cup fresh blueberries
  • 1/2 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 1 cup all-purpose flour
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup milk
  • Zest of 1 lemon
  • Juice of 1 lemon
  • Powdered sugar for dusting (optional)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease an 8-inch square baking pan.
  2. Cream together the sugar and butter until light and fluffy.
  3. Beat in the egg, vanilla extract, lemon zest, and lemon juice.
  4. Combine the flour, baking powder, and salt in another bowl.
  5. Add the dry ingredients to the creamed mixture, alternating with milk.
  6. Fold in the blueberries gently.
  7. Pour the batter into the prepared pan.
  8. Bake for 35-40 minutes, or until a toothpick comes out clean.
  9. Cool slightly, then dust with powdered sugar before serving.

Notes

Make sure your butter is softened at room temperature. Fresh blueberries yield the best flavor. Store in an airtight container for up to three days at room temperature.
