Lemon Crinkle Cookies

Delightful cookies that combine sweet and tart flavors with a light, airy texture and a sugary coating.

Ingredients

  • 2 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 tablespoon lemon zest
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon vanilla extract
  • 1/4 cup powdered sugar for dusting

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Whisk together the flour, baking powder, and salt in a medium bowl.
  3. Cream the softened butter and granulated sugar until light and fluffy.
  4. Beat in the egg, lemon zest, lemon juice, and vanilla extract until well combined.
  5. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  6. Chill the dough in the refrigerator for about 30 minutes.
  7. Scoop out tablespoon-sized portions of dough, roll into balls, and then roll in powdered sugar to coat.
  8. Place the balls on the prepared baking sheet, spacing them about 2 inches apart.
  9. Bake for 10-12 minutes or until the edges are set and the tops are crinkled.
  10. Allow to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes

For extra crinkle, roll the cookie balls in powdered sugar just before baking.
