A vibrant, zesty dessert with creamy layers and a crunchy graham cracker crust, perfect for any occasion.

Ingredients

  • 1 cup graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 1 cup powdered sugar
  • 8 oz cream cheese, softened
  • 1 cup Cool Whip
  • 1 cup lemon juice
  • 1 package instant lemon pudding mix
  • 2 cups milk

Instructions

  1. Preheat the oven to 350°F (175°C). In a bowl, combine graham cracker crumbs and melted butter. Press this mixture firmly into the bottom of a 9×13 inch pan. Bake for 10 minutes, then let it cool completely.
  2. Create the cream cheese layer by beating together the softened cream cheese and powdered sugar until smooth and creamy. Gently fold in the Cool Whip, making sure it’s fully combined and light. Spread this delightful mixture evenly over the cooled crust.
  3. Whisk the lemon pudding by combining lemon juice, instant lemon pudding mix, and milk until thickened. Carefully pour this tangy lemon layer over the cream cheese layer, smoothing it out gently.
  4. Add any remaining Cool Whip over the top of the lemon layer to create a fluffy finish. Chill the entire dessert in the refrigerator for at least 120 minutes before serving to allow it to set beautifully.

Notes

Serve chilled, garnished with lemon zest or mint leaves. This dessert can be stored in the refrigerator for up to 3 days.
