Ingredients

Scale
  • 1 box of lemon-flavored cake mix
  • 1 can (12 oz) of frozen lemonade concentrate, thawed
  • 1 cup of water
  • 1 cup of heavy cream
  • 1 cup of powdered sugar
  • 1 teaspoon of vanilla extract
  • Optional: lemon slices for garnish

Instructions

  1. Preheat the oven to the temperature specified on the cake mix box.
  2. Combine the cake mix, thawed lemonade concentrate, and water in a large bowl and mix according to package instructions.
  3. Pour the batter into a greased pan and bake as directed. Once done, let it cool completely.
  4. Whip the heavy cream in a separate bowl until it thickens. Gradually add the powdered sugar and vanilla extract while continuing to whip until soft peaks form.
  5. Cut the cooled cake into layers.
  6. Spread a layer of whipped cream mixture between each cake layer and on top.
  7. Refrigerate the cake for at least 4 hours, or overnight.
  8. Garnish with lemon slices before serving.

Notes

For extra fluffy whipped cream, chill your mixing bowl and beaters for 10 minutes before whipping the cream. A splash of lemon zest can enhance the flavor.
