A comforting and nutritious baked oatmeal packed with mixed berries, perfect for busy mornings.

Ingredients

  • 2 cups rolled oats
  • 1 cup mixed berries (fresh or frozen)
  • 2 cups milk (or plant-based milk)
  • 1/4 cup honey or maple syrup
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • Optional toppings: nuts, yogurt, additional berries

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Mix the oats, baking powder, cinnamon, and salt in a large bowl.
  3. Whisk together the milk, honey (or maple syrup), and vanilla extract in another bowl.
  4. Pour the wet ingredients into the bowl with the dry ingredients and stir until just combined.
  5. Fold in the mixed berries.
  6. Pour the mixture into a greased baking dish and spread evenly.
  7. Bake for 25-30 minutes or until set and lightly golden.
  8. Let cool slightly before serving.

Notes

Store leftovers in an airtight container in the refrigerator for up to 4 days.
