A rich, creamy No-Bake Coconut Pie that provides a tropical sweetness with a buttery graham cracker crust, perfect for hot summer days.

Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/2 cup unsweetened shredded coconut
  • 1/2 cup melted butter
  • 1 can sweetened condensed milk
  • 1 cup heavy whipping cream
  • 1 teaspoon vanilla extract
  • Extra shredded coconut for topping

Instructions

  1. In a bowl, combine graham cracker crumbs, shredded coconut, and melted butter. Press the mixture into the bottom of a pie dish to form a crust.
  2. In another bowl, whisk together the sweetened condensed milk, heavy whipping cream, and vanilla extract until well combined and slightly thickened.
  3. Pour the filling into the crust and spread evenly.
  4. Refrigerate for at least 4 hours or until set.
  5. Top with additional shredded coconut before serving.

Notes

Make sure to use sweetened shredded coconut for extra sweetness. Store leftovers in an airtight container in the refrigerator for up to 3 days.
