Peach Crumb Bars

A delightful treat combining sweet peaches with a buttery oat crumble, perfect for summer snacking.

Ingredients

  • 2 cups fresh peaches, peeled and diced
  • 1 cup all-purpose flour
  • 1 cup rolled oats
  • 1 cup brown sugar
  • 1/2 cup unsalted butter, softened
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9Ɨ9 inch baking dish.
  2. Combine flour, oats, brown sugar, baking powder, and salt in a bowl.
  3. Mix in the softened butter and vanilla extract until crumbly.
  4. Press half of the crumb mixture into the bottom of the prepared baking dish.
  5. Spread the diced peaches evenly over the crust.
  6. Sprinkle the remaining crumb mixture over the peaches.
  7. Sprinkle cinnamon on top.
  8. Bake in the preheated oven for 30-35 minutes or until golden brown.
  9. Allow to cool before cutting into bars.

Notes

Make sure to use ripe but firm peaches for the best texture. Feel free to try different fruits based on seasonal availability.
