A delightful Peach Upside Down Cake with sweet caramelized peaches and a rich, tender cake, perfect for any occasion.

Ingredients

  • 3 to 4 ripe peaches, sliced
  • 1/4 cup butter
  • 1/2 cup brown sugar
  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup milk
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9-inch round cake pan.
  2. In a small saucepan, melt the butter over low heat and stir in the brown sugar until combined. Pour this mixture into the prepared cake pan and arrange the sliced peaches on top.
  3. In a mixing bowl, whisk together the flour, granulated sugar, baking powder, and salt.
  4. In another bowl, whisk together the milk, eggs, and vanilla extract until smooth.
  5. Gradually add the wet mixture to the dry ingredients and gently mix until just combined, then pour the batter over the peaches in the cake pan.
  6. Pop the cake in the oven and bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
  7. Once baked, let the cake cool in the pan for 10 minutes, then invert onto a serving plate.

Notes

Serve warm with whipped cream or vanilla ice cream, and store leftovers in an airtight container.
