Celebrate summer with these vibrant and flavorful Salmon Kabobs, perfect for any gathering!

Ingredients

  • 1 lb salmon fillet
  • 1 bell pepper, cut into chunks
  • 1 zucchini, sliced
  • 1 red onion, cut into chunks
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • Salt and pepper to taste
  • Skewers (wooden or metal)

Instructions

  1. Preheat the grill to medium-high heat, giving it a few minutes to get nice and hot.
  2. Cut the salmon into bite-sized chunks. In a mixing bowl, drizzle with olive oil, lemon juice, salt, and pepper. Gently toss to coat.
  3. Take your skewers and thread salmon, bell pepper, zucchini, and red onion onto each skewer, balancing the colors.
  4. Place the kabobs on the preheated grill and cook for about 8-10 minutes, turning halfway through.
  5. Remove from the grill and serve warm.

Notes

For wooden skewers, soak in water for 30 minutes before grilling to prevent burning. Feel free to switch veggies based on the season.
