Ingredients

Scale
  • 1 lb ground chicken
  • 1 tablespoon vegetable oil
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • 1/4 cup soy sauce
  • 1 tablespoon fish sauce
  • 1 tablespoon brown sugar
  • 1 teaspoon sesame oil
  • 1/2 cup water chestnuts, diced
  • 1/2 cup green onions, chopped
  • 1 head of butter lettuce or romaine, leaves separated
  • Chopped cilantro for garnish
  • Chopped peanuts for garnish

Instructions

  1. Heat the vegetable oil in a skillet over medium heat.
  2. Add the ground chicken along with the minced garlic and ginger; cook until the chicken is browned, breaking it apart as it cooks.
  3. Stir in the soy sauce, fish sauce, brown sugar, sesame oil, water chestnuts, and green onions; cook for another 2-3 minutes until everything is well mixed and heated through.
  4. Remove from heat and let the mixture cool slightly to avoid wilted lettuce.
  5. To serve, spoon a portion of the chicken mixture into a lettuce leaf, garnish with chopped cilantro and peanuts, and then enjoy rolling up your wrap to eat.

Notes

Feel free to customize with your favorite veggies or toppings. Store leftover chicken in an airtight container for up to 3 days, but keep lettuce separate to maintain crispness.
