A vibrant Thai peanut salad that blends crunchy textures with a luscious peanut dressing, perfect as a main dish or side.

Ingredients

  • 4 cups mixed salad greens
  • 1 cup shredded carrots
  • 1 bell pepper, sliced
  • 1 cucumber, sliced
  • 1/2 cup red cabbage, shredded
  • 1/4 cup chopped fresh cilantro
  • 1/2 cup roasted peanuts
  • 1/3 cup creamy peanut butter
  • 2 tablespoons soy sauce
  • 1 tablespoon lime juice
  • 1 tablespoon honey
  • 1 tablespoon sesame oil
  • 1 clove garlic, minced
  • 1 teaspoon grated ginger

Instructions

  1. Mix the Veggies: In a large bowl, combine the salad greens, shredded carrots, sliced bell pepper, sliced cucumber, shredded red cabbage, chopped cilantro, and roasted peanuts. Toss them together until well mixed.
  2. Create the Dressing: In a separate bowl, whisk together the creamy peanut butter, soy sauce, lime juice, honey, sesame oil, minced garlic, and grated ginger until smooth.
  3. Dress the Salad: Drizzle the peanut dressing over the salad. Toss gently to coat all the vegetables in that creamy goodness.
  4. Serve and Enjoy: Serve the salad immediately or chill it in the refrigerator for a bit before serving to let the flavors meld together.

Notes

For added crunch, try using spicy roasted peanuts or cashews. Feel free to swap out any vegetables as needed.
