Tuscan Butter Salmon

A simple yet indulgent Tuscan-inspired dish featuring salmon fillets in rich butter, garlic, and vibrant cherry tomatoes.

Ingredients

  • 4 salmon fillets
  • 1/4 cup butter
  • 4 cloves garlic, minced
  • 1 cup cherry tomatoes, halved
  • 2 cups spinach
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Fresh parsley for garnish
  • Lemon wedges for serving

Instructions

  1. Melt the butter in a large skillet over medium heat until it’s beautifully golden and bubbly.
  2. Add the minced garlic and sauté for about 1 minute, stirring continuously until fragrant.
  3. Throw in the cherry tomatoes and cook for 2-3 minutes, until they start to soften.
  4. Stir in the spinach and Italian seasoning, cooking until the spinach is wilted, about 1-2 minutes.
  5. Push the vegetables to one side of the skillet, creating a spot for the salmon. Season with salt and pepper.
  6. Lay the salmon in the skillet, cooking for about 4-5 minutes on each side.
  7. Garnish with fresh parsley and serve immediately with lemon wedges.

Notes

Use fresh salmon and vegetables for the best flavor. Feel free to substitute spinach with other greens or add a splash of white wine for richer flavor.
