A deliciously creamy pie made with ripe bananas, a luscious custard filling, and topped with whipped cream.

Ingredients

Scale
  • 1 pre-baked pie crust
  • 3 ripe bananas
  • 2 cups milk
  • 1/2 cup granulated sugar
  • 1/3 cup cornstarch
  • 1/4 teaspoon salt
  • 3 large egg yolks
  • 2 tablespoons unsalted butter
  • 1 teaspoon vanilla extract
  • Whipped cream for topping

Instructions

  1. Slice the bananas and place them in the bottom of the pre-baked pie crust.
  2. In a saucepan, whisk together milk, sugar, cornstarch, and salt.
  3. Cook over medium heat until the mixture begins to thicken, stirring constantly.
  4. In a separate bowl, whisk the egg yolks. Gradually add a small amount of the hot milk mixture to the yolks to temper them, then return the mixture to the saucepan.
  5. Cook for another minute, then remove from heat. Stir in butter and vanilla until well combined.
  6. Pour the filling over the bananas in the crust.
  7. Allow the pie to cool, then refrigerate until set.
  8. Before serving, top with whipped cream.

Notes

Use perfectly ripe bananas for the best flavor. Customize with chocolate or coconut for delightful variations.
