Delightful Birria Tacos with savory flavors of beef and lamb, topped with fresh cilantro and crunchy onions.

Ingredients

  • 2 lbs beef chuck roast
  • 1 lb lamb shoulder (optional)
  • 34 dried guajillo chiles
  • 23 dried ancho chiles
  • 1 medium onion, chopped
  • 4 cloves garlic, minced
  • 1 tsp cumin
  • 1 tsp oregano
  • 1 tsp thyme
  • Salt and pepper to taste
  • 4 cups beef broth
  • Tortillas
  • Chopped onion and cilantro for garnish

Instructions

  1. Toast and soak the chiles in hot water until softened.
  2. Blend the softened chiles, onion, garlic, cumin, oregano, thyme, and broth into a smooth sauce.
  3. Prepare the meat by seasoning with salt and pepper and pouring the sauce over it.
  4. Simmer the mixture in beef broth until the meat is tender, about 2-3 hours.
  5. Shred the meat in the pot to absorb the broth flavors.
  6. Heat the tortillas in a skillet until pliable.
  7. Assemble the tacos with shredded meat, onions, and cilantro, serving with broth on the side.

Notes

Make the sauce ahead of time for quicker preparation. Use a slow cooker to simplify the cooking process.
