Flavor-packed blackened shrimp tacos enhanced with fresh cabbage and zesty pico de gallo.

Ingredients

  • 1 pound shrimp, peeled and deveined
  • 2 tablespoons blackening seasoning
  • 2 tablespoons olive oil
  • 8 small corn or flour tortillas
  • 1 cup shredded cabbage
  • 1/2 cup pico de gallo
  • 1/4 cup sour cream or Greek yogurt
  • Lime wedges for serving
  • Fresh cilantro for garnish (optional)

Instructions

  1. Coat the shrimp in a bowl with blackening seasoning until well covered.
  2. Heat olive oil in a skillet over medium-high heat.
  3. Cook shrimp for 2-3 minutes per side until blackened and juicy.
  4. Warm the tortillas in a separate pan or microwave until pliable.
  5. Assemble tacos with shrimp, cabbage, pico de gallo, and a dollop of sour cream.
  6. Serve with lime wedges and garnish with cilantro if desired.

Notes

For more heat, add diced jalapeños to the pico de gallo. Store leftovers in an airtight container for up to 2 days.
