Cauliflower Rice Stir Fry

A vibrant and colorful stir fry featuring cauliflower rice, mixed vegetables, and a splash of soy sauce that’s not only healthy but also incredibly satisfying.

Ingredients

  • 1 head of cauliflower, grated (or 4 cups cauliflower rice)
  • 2 tablespoons oil (sesame or vegetable)
  • 1 cup mixed vegetables (carrots, peas, bell peppers)
  • 23 green onions, chopped
  • 2 cloves garlic, minced
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • Salt and pepper to taste

Instructions

  1. Heat the oil in a large skillet or wok over medium heat until it’s shimmering and ready for action.
  2. Add minced garlic and sauté until fragrant, about 30 seconds.
  3. Add the mixed vegetables into your sizzling skillet. Stir-fry for 3-4 minutes until they become tender.
  4. Take the shredded cauliflower and add it to the skillet, combining it well with the veggie mix. Cook for another 5 minutes, stirring occasionally.
  5. Pour in the soy sauce and sesame oil, and toss to coat. Let the flavors meld together for a minute.
  6. Add the chopped green onions and season with salt and pepper to taste. Give it a good stir.
  7. Remove from heat and serve hot in bowls.

Notes

This stir fry pairs well with grilled chicken, shrimp, or tofu. It can be meal prepped for quick lunches throughout the week.
